Egyptian Rice:

Egyptian rice is the second strategic agriculture export product.  It is also one of the most popular daily Egyptian meals.  Consequently, the Egyptian government uses the latest technology in improving the types, quality, productivity and yield of rice per Fadden.  The government also exerts a great deal of effort in laying out the rice-marketing plan in the local and as well as the international markets.  It is not then surprising that Egypt’s exports of rice this year have increased 150% over last year’s rice exports.

Varieties of Egyptian Paddy Rice:

Wide Grain (GIZA 177, SAKHA 101/102/103)

The wide grain rice is similar to the American Calrose and the Australian Sunwhite.  It has a medium grain  and its main markets are Turkey, Syria, Libya, Lebanon, Jordan and Saudi Arabia. 

Fine Grain (GIZA 178)

The fine grain is a short grain similar in shape to the Thai and Vietnamese long grain and the Chinese short grain.  It is marketed in Romania, Sudan, Russia, Bulgaria as well as East and West Africa.

Recipe of Egyptian Rice :

Ingredients:

  • 2 cups rice

  • 1/4 cup unsalted butter or ghee

  • 2 cups boiling water

  • Salt to taste

 Cooking Instructions:

 Place 3 quart cooking pan over medium-high heat.  Melt the butter or ghee in the pan.  Add half of the rice.  Stir till brown.  Add the other half and pour the water over it.  Add salt according to your taste.  Cover the pan and place it over very low heat.  Turn off heat 20 minutes later.  Served warm with cooked vegetables.  (Makes 6 servings)
